Staying at home we are finding bakers, pastry chefs and pizza makers in ourselves again. Pizza, even in this quarantine, is confirmed as one of the most popular dishes ever. This is also due to its basic dough, composed of a few simple ingredients, which make it a special dish, really pleasant both to prepare and to eat.
Homemade pizza: the recipe for the Pizza Dough
Let’s see how we can prepare the pizza dough for pizza at home. It will be as good as what we find in the pizzeria, thanks to a simple recipe, which is prepared with a few ingredients, to which you can add the other ingredients you prefer.
You will realize that this is a recipe really affordable for everyone. The result will be a high and soft pizza without having to use the planetary or kneading machine. You can also check other interesting recipes of pizza, which can be homemade or ordered in restaurants.
Before you start, keep these two tips in mind:
- If you want to prepare pizza in a high, soft baking pan without a pizza dough that requires long leavening times, use the instant dehydrated brewer’s yeast, which is activated by adding 2 teaspoons of sugar.
- For a perfect result, try the double baking method, cooking the pizza first for a few minutes on the plate and then in the oven at very high temperature.
Homemade Pizza: the Ingredients
- 500g flour;
- 400ml of water;
- 3g fresh brewer’s yeast or 1.5g instant dehydrated brewer’s yeast;
- 2 teaspoons of sugar;
- 50ml of olive oil;
- 1 teaspoon of salt.
Homemade Pizza: the Procedure
First, prepare the pizza dough by combining the flour, yeast and mix everything.
In another bowl, which must be large and with the edges high enough, pour the lukewarm water and add olive oil, then mix and incorporate the flour a handful at a time. Once used half of the flour, add a tablespoon of salt, stir and finish adding the remaining flour, always a handful at a time.
At the end of this process you will get a thick and sticky pizza dough: cover it with the film and let it rise in a warm place until the volume doubles (about 2 hours).
After the leavening time, take a baking pan 35×35 cm, or the oven plate and grease it with plenty of olive oil, then pour the pizza dough and, with your hands still greased with oil, spread it to distribute it all over the pan.
If you have decided to prepare a red pizza, after adding salt, oil and spices to taste, pour the lukewarm tomato sauce on the pizza dough and let it rise for another 10 minutes; otherwise add the chosen ingredients (remember that mozzarella should be added only 5 minutes after the end of cooking!) and bake the pizza, which should cook for about 25 minutes at 210°C in a static oven or at 200°C in a ventilated oven.
