It is a typical dish of the rural tradition to prepare for a different and really delicious dinner: here is how to make pasta and beans!

Pasta and beans is a poor dish of the typical Italian cuisine, but it always agrees with everyone, real comfort food to be enriched with bread croutons and that smells of home and conviviality.

The classic recipe includes the use of cannellini beans or borlotti beans combined with short pasta, usually the fingers, but there are many regional versions. In short, we are in front of one of those dishes that changes even if made by the neighbor!

Today we will see some variations and then we will go and prepare a quick pasta and canned beans: in this way we will not only show that you can create a fabulous dish in a few minutes, but we will also enhance the canned borlotti beans by using them to create a delicious recipe. Of course, if you want, you can also use fresh beans.

Ingredients:
  • 320 g of short pasta;
  • 200 g borlotti beans;
  • 1 clove of garlic;
  • 1 onion;
  • 1 carrot;
  • 1 celery coast;
  • 3 tablespoons of tomato puree;
  • 80 g of pig cheek;
  • 1 sprig of rosemary;
  • 2 bay leaves;
  • extra virgin olive oil;
  • pepper;
  • salt.

Start by preparing the ingredients for the frying: peel the onion and peel the carrot, then chop both vegetables together with celery.

Take a large saucepan, put it on the fire and heat the oil. Add the garlic and vegetables for the fried. Stir and fry for 5 minutes before adding the bay leaf and the pig cheek cut into strips (you can also use lard or ham).

After a few minutes add the beans without their cooking liquid. Allow to take on flavor for 5 minutes then add the tomato puree. Alternatively, you can also use concentrate.

Add salt and pepper, then cook for 20/30 minutes on low heat, adding a little water (or if you prefer, some broth, which will give even more flavor). After this time, take two tablespoons of tomato and bean mixture and blend with an immersion blender.

Combine the beans smoothed with the rest and then season with chopped rosemary. A sprinkling of pepper and a drizzle of extra virgin olive oil and you’re done: enjoy your meal!

The variants of the dish

  1. Fresh pasta and beans: To prepare pasta and beans start by soaking the dried beans in a bowl of water overnight. The next day drain the beans, rinse them and put them in a pot of cold water with bay leaves. Put on the stove and cook for 80 minutes.
  2. Neapolitan pasta and beans: in this bell version of the dish, pork rind is strictly used. During the cooking of the beans, the rind is put whole and left to cook for even two hours: the taste will be sensational!
  3. Pasta and beans with mussels: in this case there are two things to do: cook the fresh mussels separately to make them open and use cannellini beans, which are more suitable for this version. Then the preparation is the same. You can use the liquid of the mussels to flavor and insert them at the end of the preparation, both with or without the shell!
